Let's say it's cold outside. . .REALLY cold. You're hungry and in the middle of freezing because the radiator can't keep up with the bitter extremes outside. What can you make that's quick, cheap, and that will warm you up on the inside? How about some uova al purgatorio? (translation - eggs in purgatory).
So odd looking.

So classic and delicious! Why doesn't everyone know about this dish?????
Seriously - this dish is wonderful and can be made in 20 minutes or less using my cheater ingredient - bottled marinara sauce. If you are lucky enough to have homemade sauce around, by all means use that.
You need (for 4 people):
1 jar of your favorite marinara sauce
1 medium yellow onion - diced
A little olive oil for sauteing the onion and the sausage
red chili flakes ( a package left over from your last pizza order will do fine)
black pepper - fresh ground is best
1 lb. Italian sausage - I HIGHLY recommend Field Roast eggplant vegetarian Italian sausage, but the meaty kind is awesome too.
1-2 eggs per person
A large skillet with a cover (or a pizza pan to cover)
1. Heat the olive oil over medium heat in the skillet. Saute the onion until translucent, then add the sausage. If you use the Field Roast variety, make sure you remove the casing first. Crumble or slice as you prefer. Cook meat sausage completely. Brown the veggie kind.
2. Add the marinara sauce, and bring to a simmer. Sprinkle in the chili flakes.
3. Once the sauce is simmering, crack an egg into a cup, then take a spoon and sort of push the sauce aside a little. Pour the egg into the dent. Repeat this step until you have added all the eggs you intend to serve. Cover the skillet and let the eggs "poach" in the simmering sauce for about 4 - 6 min, depending on how soft you like the center. At least make sure the white has cooked. I find that 5 min is my perfect egg time for this dish.

Mmmmm. . . . Gently scoop the sauce and egg into your serving bowl.Crack a little black pepper over the top, maybe sprinkle in a few more chili flakes and have at it. Let that creamy yolk pour into the sauce and enjoy.
Serving suggestions:
1. Add an additional garnish of chopped parsley and Parmesan cheese.
2. Serve with spinach saute or salad
3. Serve over pasta.
4. Serve with crusty bread or on toasted Italian ciabatta bread and a salad.
5. Definitely goes well with beer or a hearty pinot noir.
Notes - You can leave the sausage out, but I recommend including it. The added chew is really nice and the seasonings in the sausage (especially the Field Roast brand) balance the richness of the egg. Same goes for the chili flakes. You don't need much and can benefit from the spice without adding an outrageous amount of heat.
