The question for the morning is. . .How does one take simple things like nuts, ground up flax seed, oats, a few spices, and turn them into something yummy, reasonably healthy, and acceptable to teenage children bent on eating their parents out of house and home?
Mmmmmmmm. . . . .it smells divine and looks pretty too!
Last, but not least, scoop some in a bowl, pour on a little milk of choice and gobble it up!

Kameron Approved Granola (Makes about 8 servings) just under 2 hours total prep and cook time - 15 min to put the granola together and 90 ish minutes to cook, during which plenty of knitting can occur. ..
4 cups rolled oats (regular, not instant or steel cut)
1/2 cup ground flax seed
1 1/2 cup chopped raw walnuts
1/2 tsp kosher or sea salt
1 tsp each of cinnamon and ginger
1/2 tsp ground clove
1/3 c. honey
1/3 c. real maple syrup
1/3 c. melted coconut oil
1/2 to 1 cup EACH chopped dried cherries and mejool dates OR dried fruit combos of your choice
1) Preheat your oven to 250 * F. and prepare a sheet pan or large baking dish by lining it with wax or parchment paper
2) Mix all the dry ingredients in a bowl
3) Mix all the wet ingredients in another bowl - this is actually pretty important. You don't want to add them one at a time or they may soak unevenly into the dry mix, resulting in unevenly toasted and poorly flavored granola.
4) Pour your mix onto the sheet pan and put in the oven. Toast the cereal for abut 1 1/2 hours, stirring every 20 minutes or so. The mix will be a very pretty toasty honey color when done, and appear dry. The time in between stirs is time I use to knit socks, washcloths and baby hats. What are you going to knit/ work on?
5) Let the pan cool for a bit then add the fruit and stir really, really well. Make sure none of the fruit clumps together.
6) Enjoy! Store the granola in an airtight container or ziplock in the fridge. It should last about 2 weeks. Unless my son Kameron comes over. No guarantees at that point. . .
